Ricardo Zarate’s Pisco Disco Menu: • Ceviche Criollo: Fresh Hawaiian Wahoo fish infused with aji limo leche de tigre, served with caramelized camote sweet potato. • Peruvian Scallops: Succulent Yuzu kosho scallops accompanied by Tigers prawn, served over sautéed spinach with a delicate aji Amarillo bechamel. • Chicken Slider: Tender shredded poached chicken nestled in a soft brioche bun, topped with pickled celery and a rosemary aji Amarillo aioli. • Quinoa Salad: A refreshing medley of roasted Farmers Market vegetables and quinoa, dressed with a flavorful sesame rocoto dressing and garnished with fresh herbs. • Arroz con Pollo: Juicy brasa-marinated chicken thigh served alongside fragrant Peruvian green rice, accompanied by a rich and creamy huancaina sauce. • Tuna Macaroni Niçoise: Spicy Albacore tuna combined with macaroni, Peruvian botija olives, and heirloom tomatoes, finished with Jap cucumbers, crispy bacon, and tangy cornichons for a burst of flavor.
